Raised between Florida’s coastlines and the mountains of Park City, Austin learned early that food is more than sustenance — it’s memory, care, and connection. His grandmother’s kitchen was where he first discovered that cooking could hold meaning, that every ingredient carried a story, and that time at the table could bring people together.
Training and Transformation
Sushi entered his life like an inevitability. Drawn to its quiet discipline and reverence for simplicity, Austin traveled to Kauai to refine his technique under respected sushi chefs. It was there he received his first professional knives and a traditional hachimaki — the white headband symbolizing honor, discipline, and respect. It was more than a milestone. It was a commitment to craft.
